How do you get the Reflected Riches achievement with the alchemy coin?

I've been able to bounce it off of a few enemies a couple of times, but can't seem to get enough for the achievement: Reflected Riches

The mini-boss dragons in the very first level are a great/easy way to get that achievement. It almost seems like it was designed for it! When you knock it back at the dragon, it pops all of his bubbles.
