How do I kill the Viper Roots boss?

I've tried the boss battle a few times and can't seem to kill them. Is there any trick to defeating them?

The roots are vulnerable to fire damage. In the first little dungeon that we had to go through there are a few torches on the wall. You can attack with those and I believe it starts them on fire dealing damage over time as well as decent damage on the initial attack.

It goes without saying that fire spells are great in this battle too.
